Mediterranean Roast Vegetable Salad
1 red capsicum, cut into thick strips
3 zucchini, sliced into thick rounds
4 ripe tomatoes
1 red onion, quartered
2 tbsp olive oil
1/4 cup Paul Newman’s Own Balsamic Dressing
1 handful of basil
- Preheat oven to 200C.
- Combine the capsicum, tomato, zucchini, onion and a good splash of olive oil in a baking tray and cook for 35 minutes or until the vegetables are cooked through.
- Transfer to large bowl and while still hot, dress with Paul Newman’s Own Balsamic Dressing. Add the basil and bocconcini and gently toss to combine.
