1 tablespoon olive oil
500g beef mince
3 cloves garlic, crushed
300g zucchini, coarsely grated
250g cherry tomatoes
680g jar Paul Newman’s Own Homestyle Bolognese sauce
375g Vetta penne pasta
1 cup coarsely chopped fresh basil leaves
sea salt & ground black pepper
grated parmesan cheese, to serve
1. Heat olive oil in a large frying pan over a high heat. Add beef mince and garlic. Cook, stirring to break up mince, until browned.
2. Add zucchini, cherry tomatoes and Bolognese sauce. Simmer 10 minutes, stirring occasionally. Meanwhile, cook pasta as directed on the packet and return to saucepan.
3. Stir basil, salt and pepper into sauce. Add to pasta and stir to combine. Serve topped with parmesan cheese.
